Baked Gnocchi con Queso with Hatch Chiles and Roasted Corn

Ingredients
  • 2 cups Superior Melt™ White Queso Cheese Sauce Mix
  • 1/2 stick Salted Butter
  • 1/2 cup Fire Roasted Corn Nibblets
  • 4 cloves Minced Garlic
  • 1/2 cup Canned Hatch Chiles, Drained & Chopped
  • 1/2 Cup Chicken Broth or Vegetable Broth
  • 1 cup Mexican Crema
  • 1/2 tsp Tajin Seasoning
  • 1 lb. Potato Gnocchi
  • 1 handful Fresh Cilantro
  • 1/2 cup Freshly Grated Cojita Cheese
  • 1/4 cup Tortilla Strips
  • Salt
  • Pepper
Instructions
  1. Preheat your oven to 375°F and move the rack to the top third of the oven.
  2. Melt the butter in a deep oven-safe skillet over medium heat.
  3. Stir in the garlic, fire roasted corn, and hatch chiles. Cook for about a minute.
  4. Add the broth, Mexican crema, Tajin seasoning, and gnocchi to the skillet and let it heat through for 2-3 minutes.
  5. Add the Foothill Farms® Superior Melt™ White Queso Cheese Sauce to skillet and stir until blended.
  6. Take the skillet off the heat. Bake, uncovered, for 20 minutes.
  7. Optional: Broil for a few minutes to brown the top (watch it carefully).
  8. Garnish with grated Cojita cheese, tortilla strips, and chopped cilantro.
  9. Let it sit for 5 minutes prior to serving.
