Strawberry Spinach Salad with Raspberry Vinaigrette

Fresh berries add a pop of color to this nutritionally satisfying salad and Foothill Farms® Lido Italian Dressing & Seasoning Mix adds a sweet tart taste.

  • 2 cups Raspberries, Thawed or Fresh
  • 1 bag Foothill Farms® Lido Italian Dressing & Seasoning Mix
  • 1 cup Granulated Sugar
  • 2 cups Cold Water
  • 1 qt White Distilled Vinegar
  • 2.5 qts Vegetable Oil
  • 1 cup Honey
  • 48 cups Baby Spinach, Fresh
  • 24 cups Radicchio, Shredded
  • 1 1/2 cups Almonds, Slivered
  • 1 1/2 cups Wheatberries, Red, (cooked and chilled)
  • 12 cups Strawberries, Sliced, Thawed or Fresh
  1. Puree raspberries until smooth. Set aside.
  2. In a large bowl, mix together the Foothill Farms® Lido Italian Dressing & Seasoning Mix, sugar, and water until combined.
  3. Scrape down the sides of bowl, then continue to mix while slowly pouring in the vinegar and vegetable oil. Continue to mix at high speed for another three minutes.
  4. Add in the pureed raspberries and honey and mix until combined.
  5. For one salad: Place 2 cups spinach and 1 cup radicchio in a salad bowl. Top with 1 tbsp almonds, 1 tbsp wheatberries and 1/2 cup strawberries. Drizzle with 2 tbsp of Raspberry Vinaigrette.
