Stuffed Mini Peppers

  1. Preheat oven to 375℉.
  2. Cut the tops off the mini peppers and remove the seeds. Cut the mini peppers in half. Set aside.
  3. In a medium bowl, combine Foothill Farms® Italian Salad Dressing & Seasoning Mix, cream cheese, and ¼ cup of mozzarella. Mix until smooth and well-combined.
  4. Spoon the cheese mixture into each mini pepper, filling them generously. Garnish with remaining cup of mozzarella.
  5. Place the stuffed peppers on a baking sheet and bake for 20-25 minutes or until the cheese is melted and the peppers are tender.
  6. Remove from the oven and let cool slightly before serving.
