Orange Cranberry Muffins

Ingredients
  • 1 bag Foothill Farms® Cobbler Mix
  • 1/2 cup Flour
  • 1/2 tsp Baking Powder
  • 1 cup Dried Cranberries
  • 1 Egg, Large
  • 1/4 cup Vegetable Oil
  • 3/4 cup Milk
  • 1/4 cup Orange Juice
  • 1/8 tsp Orange Oil
Instructions
  1. Preheat the oven to 400°F.
  2. Line a standard muffin pan with paper or silicone cup liners or grease the cup mold in the pan.
  3. In a medium mixing bowl, whisk together the Foothill Farms® Cobbler Mix, flour, and baking powder until combined.
  4. Add the cranberries and toss in the mixture to coat.
  5. In a separate bowl, whisk together the egg, oil, milk, orange juice, and orange oil until combined.
  6. Add the wet ingredients to the dry ingredients and mix until just combined.
  7. Fill each muffin cup about ¾ of the way full.
  8. Bake the muffins for 20 minutes, or until they're nicely domed and a cake tester inserted into the center of one comes out clean.
  9. Remove the muffins from the oven, and let cool.
  10. Store muffins for up to 3 days in a plastic bag on the counter; or freeze, well wrapped, for up to one month.
