Pineapple Upside Down Bread Pudding

Ingredients

1/2  cup Butter, melted
  Brown sugar
1  jar Maraschino cherries (optional)
20  oz Pineapple (crushed or rings) (Reserve and add juice to total amount of water if using rings)
1  qt Cold water
1  pkg Foothill Farms® Bread Pudding Mix (#102T)
1 1/2  lb Bread cubes (stale bread preferred)

Instructions

  1. Preheat conventional oven to 350ºF.
  2. In a well greased half pan, drizzle butter on the bottom, generously sprinkle with brown sugar, dot with the maraschino cherries and place crushed pineapple or pineapple rings. Set aside.
  3. Pour cold water (or pineapple juice) into mixing bowl. Pour contents of Bread Pudding Mix (20.32 oz) into water while vigorously stirring with a wire whip until smooth.
  4. Add bread to wet mixture and gently stir to combine.
  5. Pour bread pudding mixture into baking pan, over butter/sugar/cherry/pineapple mixture, and bake for 45-60 minutes.
  6. Remove from oven, let cool for approximately 15 minutes. Invert pan and slice for service. Suggested toppings: Whip Topping or sprinkle with powdered sugar.
