Turkey, Cranberry & Stuffing Casserole

Combine all the essentials of the holidays into this remarkable dish. 1-cup serving provides: 1 oz eq grain, 2 oz eq M/MA, 1/4 c fruit

6  qts Water
4  cup Butter or margarine
2  bags Foothill Farms® Homestyle Herb Stuffing Mix
1  gal Hot water (180°-190°F)
1  bag Foothill Farms® Turkey Flavor Gravy Instant Mix (#079T)
6  lb Cooked turkey pieces
1  #10 can Cranberry sauce, divided


  1. For Stuffing : Carefully open stuffing bags and remove seasoning pouches. In a large stock pot, bring water, butter and contents of seasoning pouches to a boil. Remove from heat. Stir in bread crumbs and mix well. Cover and let stand for 10 minutes or until liquid is absorbed. Set aside.
  2. For Gravy: Pour 1 gallon of hot water into mixing bowl or container. Pour contents of gravy packet (14 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and gravy is smooth. Set aside.
  3. Divide turkey and 2 qts of gravy among two full-size steamtable pans. (Cover and refrigerate remaining 2 qts of gravy.)
  4. Portion 24 2-Tbsp dollops (per pan) of cranberry sauce evenly on the top of turkey-gravy mixture.
  5. Gently top turkey-gravy-cranberry mixture with an even layer of stuffing.
  6. Place in 350°F conventional oven for 45 minutes or until internal temperature reaches 165°F and it is heated through and firm. Top will be slightly crunchy.
  7. Remove from oven and place product in warming cabinet until served. Ensure that hot food is held at a temperature above 140°F. To serve: use a 1 cup/8 oz scoop. Serve with an additional 2 Tbsp serving of cranberry sauce on the side.
