Turkey, Cranberry & Stuffing Casserole

Instructions
- For Stuffing : Carefully open stuffing bags and remove seasoning pouches. In a large stock pot, bring water, butter and contents of seasoning pouches to a boil. Remove from heat. Stir in bread crumbs and mix well. Cover and let stand for 10 minutes or until liquid is absorbed. Set aside.
- For Gravy: Pour 1 gallon of hot water into mixing bowl or container. Pour contents of gravy packet (14 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and gravy is smooth. Set aside.
- Divide turkey and 2 qts of gravy among two full-size steamtable pans. (Cover and refrigerate remaining 2 qts of gravy.)
- Portion 24 2-Tbsp dollops (per pan) of cranberry sauce evenly on the top of turkey-gravy mixture.
- Gently top turkey-gravy-cranberry mixture with an even layer of stuffing.
- Place in 350°F conventional oven for 45 minutes or until internal temperature reaches 165°F and it is heated through and firm. Top will be slightly crunchy.
- Remove from oven and place product in warming cabinet until served. Ensure that hot food is held at a temperature above 140°F. To serve: use a 1 cup/8 oz scoop. Serve with an additional 2 Tbsp serving of cranberry sauce on the side.
