5  lb Diced chicken, fully cooked, IQF, 1/2" squares
2 1/2  c Hot water (180°-190°F)
1  bag Foothill Farms® Asado Style Fajita Seasoning Mix (#V463)
2  lb Green bell peppers, raw, cut into strips
2  lb Onion, raw, sliced


  1. Thaw chicken in cooler overnight or until fully thawed.
  2. Pour hot water into mixing container. Pour contents of seasoning packet into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved.
  3. Place chicken into a full size steamtable pan. Pour prepared seasoning over chicken. Toss to evenly coat.
  4. Place peppers and onions on top of chicken (do not mix with seasoning). Cover and bake in 400°F convection oven for 20-30 minutes or until internal temperature reaches 180°F.
  5. Remove from oven and place product in warming cabinet until served. Ensure that hot food is held at a temperature above 140°F.
  6. Serve with whole grain tortilla.
