Pepper Jack Taco

A crunchy taco with seasoned ground beef, a spicy Pepper Jack cheese sauce, cool lettuce and shredded cheddar cheese.

Ingredients

3 1/2  qts Hot water (180°-190°F), divided
1  bag Foothill Farms® Pepper Jack Cheese Sauce Instant Mix (#322T)
10  lb Ground beef
1  bag Foothill Farms® Taco Seasoning (either #V411 or #V413)
2  lb Shredded lettuce
2  c Shredded Cheddar cheese
58  ea Taco shells

Instructions

  1. Pour 1/2 gal hot water into mixing bowl. Pour contents of cheese sauce mix (15.5 oz) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and cheese sauce is smooth. Cover and let stand 3-5 minutes. Stir before using. Reserve warm.
  2. Brown ground beef and drain excess fat. Combine 1 ½ qts hot water and contents of Taco Seasoning in full-size steam table pan. Mix well. Add cooked meat and mix thoroughly. Cover and bake in 400ºF convection oven for 15-20 minutes; or until product reaches 180ºF. Reserve warm.
  3. For service: Inside of shell layer 2 oz taco meat, 1 Tbsp cheese sauce, 1/2 oz lettuce and 1/2 oz shredded cheese.
