Beef Enchilada Empanadas
These delicious pastry shells are filled with ground beef, cheese and spices and then baked to perfection to create a flavorful meal.

Frozen biscuit dough, large 4-4.5 oz, thawed |
Instructions
- In a pan, sauté onions and peppers until soft.
- Brown ground beef.
- Add dry Enchilada Sauce Mix and water to beef mixture. Remove from heat and stir in cheese.
- Roll out biscuits to approx 6" diameter.
- Using a #30 scoop (1.5 oz) portion out mix and place in center of biscuit.
- Fold over in half, bushed with water and sprinkled with Monterey cheese.
- Place on a lined baking sheet and bake in 325F convection oven for 16 minutes.
