Ingredients

40  each Tomatillos, huskes removed
1/2  gal Hot water (180°-190°F)
1  bag Foothill Farms® Orange Ancho Chile Sauce Mix-14.1 oz (#V460)
8  c Frozen mango cubes, thawed
1  c Minced red onion
6  Tbsp Chopped fresh cilantro
24  each Tilapia filets, 4-6 oz each
12  c Rice pilaf, mixed grained, cooked

Instructions

  1. Char tomatillos on a grill, then dice. Set aside.
  2. Pour hot water into mixing container. Pour contents of Sauce Mix into water while vigorously stirring with a wire whisk. Continue stirring until mix is dissolved and sauce is smooth.
  3. Add mangoes, tomatillos, onion and cilantro to sauce. Stir to evenly combine. Reserve warm and set aside.
  4. For 1 order: Grill tilapia filet to order for approx. 8 minutes and place on a warmed plate. Top each filet with 4 oz. of Orange-Ancho Mango Salsa. Serve alongside ½ cup pilaf. Repeat for remaining orders, as needed.
