Taco Salad Cup with Fiesta Salsa Ranch

Instructions

1. For Salsa: Pour diced tomatoes into a large bowl. Add Salsa Seasoning (5.8 oz). Stir until well blended. Cover and let sit at room temperature for 30 minutes.
2. For Ranch Dressing: In a separate large mixing bowl add Ranch Dressing Mix (3.2 oz) to buttermilk. Mix well with wire whisk or electric mixer at low speed. Add mayonnaise and continue mixing at low speed, about 2 minutes. Add in 1 qt of prepared salsa. Stir to combined. Set aside.
3. For Seasoned Taco Meat: Combine hot water and contents of Taco Seasoning (6.6 oz) in full-size steam table pan. Mix well. Add meat and mix thoroughly. Cover and bake in 400ºF convection oven for 15-20 minutes; or until product reaches 180ºF. Cool.
4. In a transparent 20 oz cup with lid, layer the following items in order: 2 Tbsp Salsa Ranch Dressing, 1/8 c onion, 1/8 c salsa, 2 oz taco meat, and 1 oz cheese. Lettuce goes on top so dressing will not wilt it. Cover with lid.
5. When ready to eat, open lid and turn over onto a plate. Salad is completely prepared with lettuce on bottom and dressing on top.
